Development of Premium Food Products
In Brazil products like coffee and cocoa have a huge potential for the development of innovative, higher added-value products. Processes like fermentation and vacuum treatment are essential for the development of innovative products, promoting new premium flavours and tastes. The experience of Fraunhofer and ITAL in process development and the identification of flavour compounds will contribute to novel chocolate and coffee products.
Fraunhofer has established and maintain strategic contacts with important agricultural research centers and producers of coffee and cocoa in Brazil, permiting to Fraunhofer the access to a wide range of different kinds of coffee and cocoa with different qualities.
